How to Cook Tomato Bruschetta

Tomato Bruschetta

Ingredients

* 3 ripe medium tomatoes
* 1 small onion
* 2 tablespoons fresh basil leaves, chopped (OR 2 teaspoons dried basil leaves, crushed)
* 1 garlic clove, pressed
* 1/4 teaspoon salt
* 1/4 teaspoon coarsely ground black pepper
* 24 slices French bread, cut 1/4-inch thick
* 2 tablespoons olive oil

Method

Preheat oven to 375F. Cut tomatoes in half; squeeze out seeds. Chop tomatoes and onion. Transfer to bowl using a scraper. Add basil to tomato mixture. Add garlic, salt and pepper; mix gently. Place bread slices on a baking stone or cookie sheet. Lightly brush surface of bread with olive oil. Bake 10-12 minutes or until lightly browned and crisp. Remove bread from oven; scoop tomato mixture onto toast slices, and serve immediately.
